Kumara Loaf

This recipe needs a batch of Easy Mince to get you started.

Prep time: 20 minutes preparation, 1 hour cooking


1 batch Easy Mince
1 egg, beaten
1 medium kūmara or large potato
1 medium carrot, grated
1 medium courgette, grated
2 Tbsp wholemeal breadcrumbs, toasted


1. Preheat oven to 180°C
2. Mix Easy Mince, egg and grated vegetables together.
3. Mould into a lightly greased loaf tin and sprinkle breadcrumbs on top.
4. Bake for 45 minutes.
5. Serve with a side of salad.


Optional: mushrooms, sweet chilli sauce, pūhā and silverbeet.
